How to Store
Store the tuna and onion puff pastry pie in an airtight container in the refrigerator for up to 2 days. Reheat slices in the oven at a low temperature to help restore the crisp texture of the pastry.
How to Freeze
Freeze the baked pie once completely cooled by wrapping it tightly in plastic wrap and placing it in a freezer-safe container for up to 1 month. Thaw in the refrigerator and reheat in the oven until warm and crispy before serving.

How to Make Tuna and Onion Puff Pastry Pie
Pour a drizzle of extra virgin olive oil into the pan, put on the heat and add the sliced onions, season with salt and add the bay leaf.
Stir with a wooden spoon, browning the onions briefly. Add a couple of inches of water.
Continue cooking over low heat, cover with the lid and cook for about 25 minutes. Check occasionally and add more water if necessary.
Cut the cherry tomatoes in half and add them to the pan with the stewed onions, together with the pitted olives.
Stir and continue cooking for a few minutes, until all the liquids have dried up. Remove the onions from the heat and let them cool.
Add the well-drained tuna, a handful of previously soaked and squeezed raisins, season with oregano and mix well.
Place the puff pastry rectangle with its baking paper on the baking tray and prick the pastry with a fork.
Stuff with the tuna and onion mixture and distribute it evenly, leaving about 2 cm free between the filling and the edges, and add the grated provolone on top.
Cover with the second rectangle of puff pastry. Prick the surface and seal the edges by folding them inward and pressing with the prongs of a fork.
Beat the egg with the milk in a small bowl and brush the entire surface of the rustic pastry.
Cook in a preheated static oven at 395°F/200°C for approximately 25 minutes, or until golden brown on the surface.
Once cooked, let it cool before cutting it into squares and serving it. Enjoy!
